Job summary

Carton House, a Fairmont Hotel, invites applications for a Senior Chef de Partie to join our luxury culinary team in Maynooth, Co. Kildare. You will lead a kitchen section, uphold high presentation standards, and assist with menu development in a fast-paced luxury environment.

We seek an experienced professional with a passion for food, HACCP knowledge, and the ability to work early and late shifts while delivering outstanding guest experiences.

Qualifications

• Previous experience in a similar position.
• Luxury hotel background desirable and passion for food.
• High standard of customer service and presentation.
• Standards-driven and detail-oriented; able to multi-task.

Responsibilities

• Lead and supervise a designated kitchen section to ensure smooth daily operations.
• Maintain exceptional presentation and quality standards in line with luxury hospitality expectations.
• Assist Sous Chefs and Head Chef with menu development and seasonal dish preparation.
• Monitor portion control, stock rotation, and minimisation of food waste.
• Ensure all dishes are prepared and served within agreed service times.
• Maintain high standards of cleanliness and organisation throughout the kitchen.
• Support ordering, stock management, and inventory control within your section.
• Ensure compliance with HACCP procedures and all food safety regulations.
• Work collaboratively with the wider kitchen and front-of-house teams to deliver guest experiences.
• Handle high-pressure service periods with attention to detail and consistency.
• Contribute creative ideas for menu improvements and events.

Key Responsibilities:

• Lead and supervise a designated kitchen section to ensure smooth daily operations.

Key Requirements:

• Previous experience in a similar position.
• Ideally have experience in a luxury Hotel background, be talented, creative and have a genuine passion for food.
• Be courteous and focused on providing a consistently high standard of customer service.
• Be standards driven and detail-orientated.
• The ability to multi-task in fast-paced environment.
• Be flexible, both early and late shift roster.
• A good command of the English Language.
• Excellent self-presentation.
• Detailed knowledge of HACCP.
• Relevant professional qualification.
