You will oversee the floor alongside the Restaurant Manager, ensuring flawless service between front-of-house and kitchen teams while upholding luxury hospitality standards.

Qualifications

• Experience in a supervisory/management role within a Michelin-star or high-end fine dining restaurant.
• Strong leadership and training abilities to develop front-of-house teams.
• Excellent communication and guest relations skills.
• Solid knowledge of wine, food, and beverage pairings.

Responsibilities

• Support the Restaurant Manager in day-to-day operation of the Michelin-starred restaurant.
• Lead the floor during service, coordinating front-of-house and kitchen teams.
• Uphold Michelin-level standards of hospitality, precision, and detail.
• Role model service excellence, etiquette, and guest engagement.
• Supervise, motivate, and develop the front-of-house team.
• Conduct pre-service briefings and post-service debriefs.
• Handle guest relations with discretion for VIPs and regular guests.
• Ensure knowledge of menus, tasting menus, wine pairings, ingredients.
• Collaborate with Head Chef to align service with culinary vision.
• Monitor service flow, table pacing, and reservation management.
• Ensure compliance with health, safety, hygiene, licensing regulations.
• Support training and onboarding of team members.
• Assist in stock control and ordering procedures.
• Contribute ideas for service enhancements and guest experience.

We are currently recruiting an Assistant Restaurant Manager to join our Michelin Star Restaurant The Morrison Room team at Carton House.

Key responsibilities:

• Support the Restaurant Manager in overseeing the day-to-day operation of the Michelin-starred restaurant, ensuring consistently exceptional service standards.
• Lead the floor during service, ensuring seamless coordination between front-of-house and kitchen teams to deliver a flawless guest experience.
• Uphold and promote the restaurant's Michelin-level standards of hospitality, precision, and attention to detail at all times.
• Act as a role model for service excellence, setting the tone for professionalism, etiquette, and guest engagement.
• Supervise, motivate, and develop the front-of-house team, ensuring continuous improvement in service delivery and product knowledge.
• Conduct pre-service briefings and post-service debriefs to communicate expectations, feedback, and operational updates.
• Handle guest relations, including welcoming VIPs, regular guests, and managing any feedback or concerns with discretion and professionalism.
• Ensure exceptional knowledge of all menus, tasting menus, wine pairings, ingredients, and culinary techniques to confidently guide guests.

Key Requirements:

• Previous experience in a supervisory or management role within a Michelin-star or high-end fine dining restaurant.
• Strong understanding of Michelin-level service standards and luxury hospitality expectations.
• Exceptional leadership skills with the ability to inspire, train, and develop a high-performing team.
• Outstanding communication and interpersonal skills with a confident and professional demeanor.
• Strong wine, food, and beverage knowledge, ideally including formal training (e\u0026#34;e.g., WSET or equivalent\u0026#34;).
• Ability to perform effectively under pressure in a fast-paced, high-expectation environment.
• Excellent organizational and problem-solving skills with strong attention to detail.
• Passion for hospitality, gastronomy, and delivering world-class guest experiences.
• Fluent spoken and written English.
• Full flexibility to work evenings, weekends, and special events as required.
