Fota Island Resort is seeking a Breakfast Manager to lead daily breakfast service, with potential for lunch/CB support, in a busy 4/5-star setting. You will guide F&B staff, ensure timely setups, and maintain high standards of food, beverage and service across a dynamic guest experience.

The role requires strong leadership, excellent communication, and a passion for hospitality. Availability across the full week and own transport are essential due to early starts and site operations.

• Solid knowledge of food service operations and standards.

• Experience in training staff in F&B environments.

• Fluent English in speech and writing.

Responsibilities

• Oversee daily breakfast service and assist with lunch/CB service.
• Provide guidance to F&B staff and monitor performance for guest experience.
• Ensure proper setup of breakfast and lunch with quality standards.
• Communicate important info to kitchen and support teams during service.
• Inspect outlets for cleanliness and maintenance requirements.
• Generate ideas to improve service and revenue and stay ahead of competitors.
• Lead service briefings on dress code, hygiene and procedures.

What we are looking for:

• Previous experience is required in a similar role in a 4 or 5 star background
• Previous experience in a high volume/fast paced environment

Responsibilities:

• Overseeing and running of the daily Breakfast service and assist with Lunch service and C&B
• Giving support and guidance to fellow Food & Beverage personnel as well as monitor job performance to ensure a successful experience by our guests
• Responsible for the appropriate and timely set up of breakfast and lunch service while maintaining standards of food, beverage and service specifications
• Communicate information to the kitchen and other supportive departments prior to and during service.
• Inspect and oversee the cleanliness and maintenance of the outlets
• To generate new ideas for service and products that will maintain a competitive and leading edge over our Competitive set and generate additional revenue
• To ensure service briefings are carried out as appropriate regarding core standards (dress code, hygiene, service procedure)
