Job summary

Fota Island Resort is seeking a Breakfast Manager to lead our breakfast service in a fast-paced, four- or five-star setting on-site at Foaty, Fota, Co. Cork. The role requires energy, initiative and a passion for guest experience.

The successful candidate will have extensive F&B leadership experience, superb service standards and strong team mentoring skills. Availability across the full week and own transport are required due to early starts.

Qualifications

• Previous experience in a similar 4- or 5-star setting.
• Experience in high-volume/fast-paced environments.
• Excellent knowledge of Food Service and customer service practices.
• Strong communication and interpersonal skills across teams.
• Grooming standards and professional presentation.
• Basic computer skills for shift management and records.
• Leadership and delegation capabilities in a busy breakfast service.

Responsibilities

• Overseeing daily Breakfast service and assisting Lunch service and C&B.
• Provide guidance to Food & Beverage staff and monitor performance.
• Set up breakfast and lunch service to standards of food, beverage and service.
• Communicate information to kitchen and other departments during service.
• Inspect cleanliness and maintenance of outlets.
• Generate ideas to maintain competitive service and revenue.
• Lead service briefings on dress code, hygiene and procedures.

What we are looking for:

• Previous experience is required in a similar role in a 4 or 5 star background

Responsibilities:

• Overseeing and running of the daily Breakfast service and assist with Lunch service and C&B
• Giving support and guidance to fellow Food & Beverage personnel as well as monitor job performance to ensure a successful experience by our guests
• Responsible for the appropriate and timely set up of breakfast and lunch service while maintaining standards of food, beverage and service specifications
• Communicate information to the kitchen and other supportive departments prior to and during service.
• Inspect and oversee the cleanliness and maintenance of the outlets
• To generate new ideas for service and products that will maintain a competitive and leading edge over our Competitive set and generate additional revenue
• To ensure service briefings are carried out as appropriate regarding core standards (dress code, hygiene, service procedure)
