Job summary

Fota Island Resort is seeking a Breakfast Manager to lead the daily breakfast service with energy and hospitality excellence. The role requires early starts (6am) and full availability across the week, with opportunities to influence guest experiences across dining and events.

You will manage a fast-paced team in a 4- or 5-star environment, ensuring impeccable service, training, grooming, and standards. A proactive, hands-on leader who drives guest satisfaction will thrive in this role.

Qualifications

• Previous experience in a similar 4- or 5-star environment.
• Experience in high-volume/fast-paced settings.
• Excellent knowledge of Food Service.
• Strong customer service and communication skills.
• Extensive experience training F&B staff and enforcing grooming, etiquette and service standards.
• Organised with strong attention to detail.
• Excellent interpersonal skills.

Responsibilities

• Oversee and run the daily Breakfast service and assist with Lunch service and banqueting.
• Provide guidance to F&B staff and monitor performance to ensure guest satisfaction.
• Ensure timely set-up of breakfast and lunch to standards of food, beverage and service.
• Communicate with kitchen and other departments before and during service.
• Oversee cleanliness and maintenance of outlets.
• Generate ideas to enhance service and revenue and stay ahead of the competition.
• Lead service briefings on core standards (dress code, hygiene, service procedures).
