Job summary

Qualifications

• Diploma or Degree in Hospitality Management, Hotel Operations, Food & Beverage Management, or related field.
• Certified in Food Safety and Hygiene (HACCP preferred).
• Occupational Health & Safety certification is an advantage.
• Knowledge of environmental and sustainability practices preferred.
• Minimum 5-8 years of stewarding experience in hotels, resorts, or large-scale food service operations.
• Minimum 2-3 years in a supervisory or managerial stewarding position.
• Experience managing banquet and high-volume operations.
• Pre-opening hotel experience is highly preferred.
• Experience in luxury hotel or international brand operations is advantageous.

Responsibilities

• Oversees day-to-day kitchen utility operations including dish room, night cleaning, back dock cleaning and maintenance, and banquet plating and food running.
• Supervises kitchen employees not actively engaged in cooking and drives guest and employee satisfaction within budget.
• Leads day-to-day operations, schedules events, and ensures supplies, equipment, and uniforms are available.
• Manages inventories of food, equipment, and service ware; conducts inventories and reports shortages.
• Ensures compliance with food handling, sanitation standards, and applicable laws.
• Provides leadership and direction to the kitchen team, promotes performance and budget goals, and fosters collaboration.
• Participates in HR activities such as recruiting, training, and performance management.
