Job summary

Milk & Madu Group is seeking a Sous Chef in Bali for its upcoming The Common Uluwatu outlet. This full-time role focuses on leading kitchen operations, menu execution, and staff development during pre-opening and launch phases.

You will oversee cooking, plating, and cost control while maintaining brand standards and collaborating with front-of-house to meet guest needs. Experience in Balinese or Asian cuisines is valued.

Qualifications

• 3–5 years of professional kitchen experience
• 2–3 years in a supervisory or sous chef role
• Formal culinary training from a recognised institution
• Expertise across multiple cuisines or specialized areas
• Strong leadership and team management capabilities
• Solid knowledge of health, safety and food hygiene regulations
• Excellent organisational and time-management skills
• Cost management, portion control and inventory understanding
• Ability to adapt to guest preferences and high-volume service

Responsibilities

• Assist Head Chef in menu development and culinary innovation
• Oversee daily kitchen operations and plating quality
• Supervise kitchen staff, provide training and feedback
• Monitor food costs and ingredient usage for profitability
• Ensure health, safety and sanitation standards are followed
