About the role
We are seeking an experienced Sous Chef to join the culinary team at Milk & Madu Group in Bali. This is a full-time position that will be based at our upcoming outlet, The Common Uluwatu, one of our exciting new hospitality destinations in Uluwatu, Bali.
As Sous Chef, you will play a crucial leadership role in establishing and managing the kitchen operations of the new outlet, working closely with the Head Chef to ensure the highest standards of food quality, consistency, presentation, hygiene, and kitchen efficiency.
This role will be particularly important during the pre-opening and opening stages of The Common Uluwatu, where you will have the opportunity to contribute to kitchen preparation, team development, menu execution, operational setup, and ensuring a smooth launch of the outlet.
Key responsibilities
Assist the Head Chef in menu development, recipe creation, and culinary innovation whilst maintaining our signature style and standards
Oversee daily kitchen operations, including food preparation, cooking, and plating to ensure consistency and quality across all dishes
Manage and supervise kitchen staff, providing training, guidance, and performance feedback to maintain team productivity and morale
Monitor food costs, portion control, and ingredient usage to optimise kitchen efficiency and profitability
Ensure compliance with health and safety regulations, food hygiene standards, and proper sanitation practices throughout the kitchen
Maintain inventory levels, manage food storage, and coordinate with suppliers to ensure adequate stock of quality ingredients
Handle kitchen scheduling, shift management, and workforce planning to meet service demands
Quality-check all outgoing dishes and maintain presentation standards that reflect our brand values
Collaborate with front-of-house staff to understand guest preferences and respond to special dietary requirements or requests
Contribute to a positive kitchen culture and support the Head Chef in achieving operational excellence
What we're looking for
A minimum of 3-5 years' professional kitchen experience, with at least 2-3 years in a supervisory or sous chef capacity
Formal culinary training or qualification from a recognised culinary institution
Expertise in food preparation, cooking techniques, and menu execution across multiple cuisines or specialised culinary areas
Strong leadership and team management skills with the ability to motivate and develop kitchen staff
Comprehensive knowledge of health, safety, and food hygiene regulations applicable to commercial kitchens
Excellent organisational and time management abilities, with the capacity to manage multiple priorities during service periods
Creative mindset with a passion for culinary innovation and ability to adapt to changing guest preferences
Proficiency in cost management, inventory control, and understanding of food costing principles
Strong communication skills and the ability to work collaboratively with diverse teams
Experience working in a high-volume, fast-paced kitchen environment
Flexibility to work variable shifts, including evenings, weekends, and public holidays as required
Experience in Balinese, Indonesian, or Asian cuisine is highly desirable
