Job summary

The Senior Sous Chef - Pre-Opening Restaurant role at Tone All Day Lounge in Bali places you at the heart of building a world-class kitchen from the ground up. You will work closely with the General Manager and culinary leadership to translate the concept into practical kitchen operations, menus, and production standards, ensuring every dish reflects the venue’s fire-driven identity.

You will lead menu development, recipe testing, and the standardization of recipes, portions, and plating.

Responsibilities

• Lead kitchen pre-opening processes under the Executive Chef and General Manager.
• Translate culinary concept into practical kitchen operations, menus, recipes, and standards.
• Support menu development, recipe testing, and finalization of dishes.
• Develop standardized recipes, portions, plating guidelines, and production procedures.
• Lead kitchen trials, tastings, and soft-opening activities.
• Coach and train kitchen staff, building a disciplined and creative culture.
• Oversee daily kitchen operations, ensure coordination with service and F&B.
• Ensure food safety, hygiene, and quality across all dishes.
