Job summary

Mercure Jakarta Gatot Subroto is seeking an experienced F&B Outlet Manager to lead daily operations, ensure top guest service, and drive revenue within a hotel setting. You will oversee service standards, staffing, inventory, and collaboration with kitchen and other departments to deliver smooth, profitable outlets.

The role requires leadership, budgeting, and strong English communication, with flexibility for shifts and events in a dynamic hospitality environment.

Qualifications

• Diploma or Bachelor's degree in Hospitality/Hotel/Food & Beverage Management or a related field.
• 2–3 years of experience in Food & Beverage operations with supervisory/management exposure.
• Previous experience in a hotel, resort, upscale restaurant, or high-volume F&B operation preferred.
• Strong knowledge of restaurant operations, service standards, food and beverage products, and cost control.
• Good budgeting, forecasting, inventory, and revenue management.
• Excellent leadership, communication, interpersonal, and problem‑solving skills.
• Strong guest-service orientation and ability to handle challenging situations professionally.
• Good command of English; additional languages advantageous.
• Proficient in Microsoft Office; familiar with POS and restaurant management systems.
• Flexible to work shifts, weekends, public holidays, and events.

Responsibilities

• Oversee daily F&B outlet operations to ensure smooth, high-quality service.
• Maintain consistently high standards of guest service, food and beverage quality, and presentation.
• Lead, supervise, and develop the F&B team to meet standards and targets.
• Coordinate daily briefings, promotions, VIP guests, and targets.
• Monitor guest feedback and address issues promptly and professionally.
• Ensure proper outlet opening/closing procedures and stock management.
• Collaborate with kitchen, stewarding, engineering, and other departments to resolve issues.
• Assist in menu planning, promotions, and events to boost revenue.
