Raffles Bali seeks an experienced Chief Steward to lead the stewarding operation across F&B outlets and banquets. Ensure a clean, sanitized back of house and oversee equipment handling, storage and inventory in line with brand standards.

Responsibilities include staff scheduling, training, controlling expenses and maintaining HACCP compliance to deliver exceptional guest experiences at a luxury resort on Jimbaran Bay.

Formación

• Minimum of 3 years of relevant experience as Chief steward.
• Great knowledge in hygiene to be able to teach young colleagues
• Great knowledge of chemicals to be able to conduct training

Responsabilidades

• Plan staff schedules effectively according to the level of business in order to maximize productivity and minimize payroll cost.
• Understand the basic philosophy of the company and implement it in daily work.
• Adhere to operating expenses and ensure budgeted costs are controlled.
• Monitor and control breakage and loss of all operating equipment.
• Maintain HACCP program where implemented.
• Ensure stewarding department is managed efficiently.
• Supply outlets with clean and dry operating equipment.
• Ensure kitchen utensils are clean and dry and available.
