Job summary

Pepito Culinary in Bali is seeking a Commercial Director Culinary to lead commercial strategies across Central Kitchen and premium outlets. You will drive sales, profitability, and growth with a strong focus on menu development, cost control, and cross-functional collaboration.

The role requires 5+ years in F&B leadership, P&L management, and a passion for excellence in hospitality. Based in Bali, travel between locations is expected as needed.

Qualifications

• Bachelor's degree in Hospitality, Culinary, Business Management or related field.
• Minimum 5+ years of F&B leadership experience.
• Proven track record in P&L management, food cost control, menu/concept development and business growth.
• Strong commercial mindset with analytical and leadership skills.

Responsibilities

• Develop and execute commercial strategies to drive sales, profitability, and business growth across Central Kitchen and Premium outlets.
• Oversee P&L, budgeting, forecasting, food cost, labor cost and operational expenses.
• Lead Central Kitchen and Premium F&B outlets with focus on efficiency, productivity, quality and cost control.
• Drive concept, menu and product development including menu engineering and pricing.
• Collaborate with Culinary, Marketing, Procurement, Finance and Operations to strengthen brand and guest experience.
• Lead new product launches, promotions, events, and F&B initiatives.
• Ensure service, food quality, hygiene, food safety and operational standards.
• Develop and motivate diverse F&B teams, fostering a culture of performance and improvement.
• Support new outlet openings and business expansion including feasibility and planning.
