Job summary

Pepito Culinary in Bali is seeking a Commercial Director - Culinary to drive revenue and innovation across Central Kitchen and premium F&B outlets. You will lead menu development, pricing, and product concepts while ensuring high standards and cost control. Travel between locations may be required.

The role demands a strong commercial mindset, 5+ years in F&B leadership, and a track record in P&L management, budgeting, and business growth. Based in Bali with a dynamic, collaborative team.

Qualifications

• Bachelor’s degree in Hospitality, Culinary, Business Management, or a related field.
• Minimum 5+ years of F&B leadership experience, preferably managing Central Kitchen and premium outlets.
• Proven track record in P&L management, food cost control, menu/concept development, and business growth.
• Strong commercial mindset with analytical, leadership, communication, and problem-solving skills.
• Experience in multi-outlet F&B, hospitality, premium retail culinary, or food service preferred.
• Strong understanding of food safety, quality, operational standards, and inventory management.
• Willing to be based in Bali and travel between locations as required.

Responsibilities

• Develop and execute commercial strategies to drive sales, profitability, and growth across Culinary Operations.
• Oversee Central Kitchen and Premium F&B outlets; ensure efficiency, productivity, quality and cost control.
• Lead concept, menu, and product development including menu engineering and pricing.
• Collaborate with Culinary, Marketing, Procurement, Finance, and Operations to strengthen brand and customer experience.
• Drive new product launches, promotions, events, and F&B initiatives.
• Ensure consistent service, food quality, hygiene, safety, and standards across outlets.
• Lead, develop, and motivate diverse F&B teams with a culture of performance and improvement.
• Support new outlet openings and business expansion including feasibility and staffing.
