Job summary

The Luxury Collection Resort & Spa, Jimbaran, Bali seeks a Chef de Partie (Bakery) to supervise bakery production, ensure food safety, and support the Pastry Chef in delivering breads and viennoiserie for restaurants, banquets and guest amenities.

You will maintain portion control, monitor stock, and train or coach junior staff, while upholding Marriott standards and maintaining professional appearance.

Qualifications

• Minimum 3-5 years of bakery experience in hotels, resorts, bakeries, or commercial food production.
• At least 1-2 years as Demi Chef de Partie or equivalent role.
• Experience in high-volume bakery production preferred.
• Luxury hotel or international brand experience is an advantage.
• Pre-opening experience is desirable.

Responsibilities

• Supervise and coordinate preparation, production, and presentation of all bakery items.
• Ensure quality, food safety compliance, and efficient kitchen operations.
• Assist the Pastry Chef or Sous Chef in delivering breads, viennoiserie, specialty bakery items, and baked goods for restaurants, banquets, events, and guest amenities.
• Determine how foods should be presented and create decorative displays; monitor portions and garnishes.
• Monitor stock of kitchen supplies and food; maintain kitchen logs for the safety program.
• Record concerns and support cooks; ensure guest service needs are met.
