Manage cellar operations including stock control, inventory, rotation and storage conditions
Build and update the wine list and wines by the glass, and price them for margin
Provide polished, warm guest-facing service including decanting, Coravin, and verbal recommendations
Perform tableside service and upsell wine offerings gracefully while reading guest preferences
Train and coach floor staff on wine service
Work with Hong Kong importers and suppliers
Manage POS and inventory systems
Provide food and wine pairing recommendations for classic and modern French cuisine
At least 2 years as a sommelier or assistant sommelier in a fine-dining or upscale French restaurant
WSET Level 3 or Court of Master Sommeliers Certified Sommelier (Level 2) minimum
In-depth knowledge of French wine regions, especially Burgundy, Bordeaux, Champagne, the Loire and the Rhône
Solid understanding of Old and New World wines, Champagne, Cognac, Armagnac and digestifs
Strong food and wine pairing skills for classic and modern French cuisine
Comfortable with POS and inventory systems
Must be legally eligible to work in Hong Kong
Flexible to work evenings, weekends and public holidays
Well groomed and punctual, able to work under pressure
