Job summary

Novotel Century Hong Kong is seeking a dynamic Restaurant Manager for Le Café, our signature all-day dining buffet. You will lead service, manage daily operations, and drive guest satisfaction while achieving P&L targets in a high-volume setting.

You will supervise a service team, coordinate with culinary and marketing, and ensure food safety and exceptional guest experiences. English and Cantonese communication is essential; prior hotel F&B leadership is required.

Qualifications

• F&B supervisory/management experience in hotel dining or high-volume buffets.
• Proven leadership for diverse frontline service team.
• Strong knowledge of cost control, staffing, and inventory management.
• Experience with Micros POS and hotel operations.
• Excellent English and Cantonese communication.

Responsibilities

• Daily Floor & Service Management: Lead day-to-day operations of Le Café (breakfast, lunch, and dinner buffet service).
• Team Leadership & Development: Supervise, train, and motivate the service team; arrange duty rosters and conduct briefings.
• Financial & Cost Control: Monitor restaurant revenue, manage labor and operating costs, control wastage, and work with F&B management to hit P&L targets.
• Guest Experience & Feedback: Engage with diners, handle inquiries and feedback, and enhance dining experience to build loyalty.
• Operational Collaboration: Partner with culinary, stewarding, and marketing on promotional buffets, menus, events, and hygiene standards.

About the Role

We are looking for a dynamic, customer-focused, and results-driven Restaurant Manager to take charge of our signature all-day dining buffet restaurant, Le Café, at Novotel Century Hong Kong. In this role, you will oversee day-to-day operations, lead a dedicated service team, drive guest satisfaction, and optimize financial performance in a high-volume, vibrant dining environment.

Key Responsibilities

• Daily Floor & Service Management: Lead day-to-day operations of Le Café (breakfast, lunch, and dinner buffet service), ensuring smooth table turnover, impeccable cleanliness, and the highest standards of guest service.


• Team Leadership & Development: Supervise, train, and motivate the service team; arrange duty rosters and conduct regular briefings to maintain strong team morale and high productivity.


• Financial & Cost Control: Monitor restaurant revenue, manage labor and operating costs, control wastage, and work closely with the F&B management team to achieve P&L targets.


• Guest Experience & Feedback: Engage with diners, handle guest inquiries and feedback professionally, and continuously enhance the dining experience to build guest loyalty.


• Operational Collaboration: Partner with the culinary team, stewarding, and marketing on promotional buffets, seasonal menus, festive events, and food safety/hygiene standards.

Requirements

• Relevant Experience: Minimum 3–5 years of F&B supervisory/management experience in hotel all-day dining restaurants or high-volume buffet operations.


• Leadership Skills: Proven ability to lead, mentor, and inspire a diverse frontline service team in a fast-paced environment.


• Financial & Operational Mindset: Sound knowledge of restaurant cost control, staffing ratios, and inventory management.


• System Proficiency: Hands-on experience with POS systems (e.g., Micros) and basic computer applications.


• Communication: Excellent interpersonal and communication skills in English and Cantonese (Mandarin is an advantage).
