Job summary

PURE BAKING&CO.HK LIMITED in Hong Kong seeks a Bakery Head Chef to lead daily back-of-house operations in Mid Levels, Central and Western District. You will supervise staff, allocate workload, and standardise hygiene and kitchen procedures while coordinating with front-of-house and cross-functional teams to ensure top-quality products.

Ideal candidates have 6–10 years of relevant experience and at least 5 years as a bakery head chef, with expertise in French pastry, Japanese bread, and European

Qualifications

• 6-10 years of relevant experience, with at least 5 years of bakery head chef experience.
• Proficiency in French pastry, Japanese bread and European bread with excellent craft skills; basic Western casual meals preferred.
• Experience as an executive chef or head chef in star-rated hotels preferred.

Responsibilities

• Supervise daily back-of-house operations and staff scheduling.
• Coordinate workload allocation and ensure consistent product quality.
• Establish back-of-house rules for operations and hygiene; supervise compliance.
• Liaise with front-of-house, supply chain, R&D and cross-functional teams.
• Control taste, presentation, portion size and service speed to maintain standards.
• Manage ingredient usage to minimise waste and control kitchen costs.
• Review ingredient purchase orders and manage quantities, quality and pricing.
• Supervise ingredient inspection, storage and issuance; conduct monthly inventory.
