Job summary

The Alexander Hotel Collection is seeking a dynamic Sous Chef for Barnett Hill Hotel in Guildford, Surrey. You will report to the Head Chef and oversee all aspects of food production, from sourcing to delivering exceptional dishes.

You will create menus to inspire local guests and support an afternoon tea concept to drive local business. Join a team with plans to maintain 2 Rosettes, lead a 6-chef operation, and develop a vibrant kitchen culture across hotel dining rooms, banqueting, and

Qualifications

• Experience delivering 2 Rosette quality hotel dining.
• Proven ability to select and retain a high-performing kitchen team.
• Demonstrate cooking flair and leadership during trials.
• Ability to manage multi-menu requirements and busy banqueting.

Responsibilities

• Recruit, train, and coach a team of 6 Chefs and 3 Kitchen Porters.
• Plan menus, source suppliers, order, store, prepare, cook and serve across hotel outlets.
• Develop menu ideas to reach 2 Rosettes across restaurant, banqueting, afternoon tea and events.
• Ensure HACCP and food hygiene, health and safety compliance.
• Achieve gross profit targets to enable future investment.
• Foster passion, teamwork and effective communication across departments.
• Menu development across hotel venues including wedding suites.
