Job summary

Heartwood Collection is seeking a passionate Sous Chef to lead kitchen operations within our branded Heartwood Brasseries and pubs. You will run sections, train cooks, and support the head chef to deliver fresh, seasonal dishes across our venues.

We welcome 3–4 years of Sous Chef experience, with exposure to branded operations and basic administration. The role offers a 48-hour contract with paid overtime, TRONC-based pay, and development through our Stepping Stones programme.

Qualifications

• Have proven track record in running service from the line and fresh food cuisine.
• Able to lead and run kitchen sections, demonstrate leadership, and assist the head chef.
• 3–4 years in a Sous Chef role with exposure to branded operations and basic admin understanding.

Responsibilities

• Lead kitchen service across designated sections and coach junior staff.
• Train and support chefs to maintain quality and consistency.
• Assist the head chef with daily operations and administration tasks.

On Target Earnings £15.25 - £15.75 * Including TRONC (up to £13.60 basic PLUS Tronc)

About You

• Have a proven track record in running service from the line, fresh food cuisine and delivering training and support to chefs
• Able to work on and run any sections in the kitchen team, demonstrate leadership skills and assist the head chef
• 3-4 years experience in a Sous Chef role or similar, preferably with exposure to branded operations and a basic understanding of administration operations
