Job summary

MCG Recruitment is representing a brand-new Cardiff City Centre opening for a high-energy restaurant and cocktail bar. We seek an experienced Senior Sous Chef to lead from the front, partner with the Head Chef and build an outstanding kitchen operation from day one.

You’ll be hands-on during busy services, drive standards, and mentor a brigade to deliver top-notch, consistent food with strong commercial awareness.

Qualifications

Proven experience as Senior Sous Chef or strong Sous Chef ready to step into senior leadership.

Responsibilities

Deputise for the Head Chef and take full control when they are away.
Lead the brigade - motivate, coach and develop your team.
Own the service - keep the kitchen organised, calm and moving.
Drive food quality - ensure consistency, presentation and execution.
Set the standards - food hygiene, organisation and performance.
Own stock & costs - control waste, usage and ordering.
Support training & development - build a strong team from the ground up.
Solve problems quickly - stay calm and make things happen.
Help shape kitchen culture from opening day.
