Job summary

Brig o’ Doon House Hotel, part of RAD Hotel Group, is seeking a dynamic Restaurant Manager to lead Tales Restaurant, inspire the front‑of‑house team, and uphold the exceptional standards our guests know and love.

You will manage daily restaurant operations, oversee reservations and table flow, recruit and develop staff, monitor labour and costs, and ensure health and safety compliance while delivering memorable hospitality experiences for weddings, events and guests.

Qualifications

• Minimum 1 year experience as Restaurant Manager or Assistant Manager in a quality venue.
• Experience in a fast-paced restaurant or hotel environment beneficial.
• Strong leadership, communication, and organisational skills.
• Passion for hospitality and guest satisfaction.
• Positive, proactive, team-focused, and professional.

Responsibilities

• Lead, train, and motivate the front-of-house team.
• Manage daily restaurant operations, reservations, and table flow.
• Recruit, schedule, and develop team members.
• Monitor financial performance, including labour costs, sales, and stock control.
• Drive revenue through upselling and excellent guest engagement.
