Job summary

Maki & Ramen in Leicester is seeking an experienced Sushi Chef to launch and lead the sushi operation on our new site. The role combines high-quality sushi and sashimi with fast service, training junior staff, and maintaining strict food safety standards.

Salary starts at £12.71–£13.50 per hour, with typical earnings up to £16 per hour, and hours of 45–50 per week. This in-person role offers a friendly team, meals, and opportunities to grow with our growing brand.

Qualifications

• Proven experience as Sushi Chef in high-quality, high-volume Japanese restaurant.
• Excellent knife skills including filleting, portioning and sashimi cutting.
• Strong knowledge of Japanese ingredients and sushi rice preparation.
• In-depth understanding of raw fish handling, HACCP and food safety standards.
• Ability to work calmly, accurately and efficiently under pressure while maintaining presentation.

Responsibilities

• Prepare and present high-quality sushi and sashimi to a high standard with precision and speed.
• Carry out advanced knife work, fish butchery and rice preparation per Japanese techniques.
• Ensure correct handling, storage and preparation of raw fish with food safety compliance.
• Maintain immaculate cleanliness and mise en place in the sushi section.
• Support Head Sushi Chef with service leadership, quality control and mentoring junior staff.
