Maki & Ramen in Nottingham is hiring an experienced Sushi Chef to lead the launch of a new site. You will prepare and plate high-quality sushi and sashimi, perform advanced knife work, and ensure safety and freshness of raw fish. The role offers flexible 20–25 hours per week with a competitive hourly rate and tips.

Qualifications

• Proven experience as a Sushi Chef in a high-quality, high-volume Japanese restaurant.
• Excellent knife skills including filleting, portioning and sashimi cutting.
• Strong knowledge of Japanese ingredients, rice preparation and traditional techniques.
• In-depth understanding of raw fish handling, HACCP and food safety standards.
• Ability to work calmly, accurately and efficiently under pressure while maintaining quality.

Responsabilités

• Prepare and present high-quality sushi and sashimi to an exceptional standard, with speed and precision.
• Carry out advanced knife work, fish butchery and rice preparation using Japanese techniques.
• Ensure safe handling, storage and preparation of raw fish in line with regulations.
• Maintain immaculate cleanliness and mise en place in the sushi section.
• Assist Head Sushi Chef with service leadership, quality control and mentoring junior staff.
