Maki & Ramen is seeking an experienced Sushi Chef to lead the launch of a new site in Frankley, UK. The role requires high-volume Japanese cuisine expertise, strong knife skills and leadership to train junior team members.

You will prepare sushi and sashimi to exacting standards, manage fish handling with HACCP compliance, and contribute to a warm, guest-focused service. Competitive hourly rate and tips offered.

Qualifications

• Proven experience as a Sushi Chef in a high-quality, high-volume Japanese restaurant.
• Excellent knife skills, including filleting, portioning and sashimi cutting.
• Strong knowledge of Japanese ingredients, sushi rice preparation and traditional techniques.
• In-depth understanding of raw fish handling, HACCP and food safety standards.
• Ability to work calmly, accurately and efficiently under pressure while maintaining presentation.

Responsibilities

• Prepare and present sushi and sashimi to a high standard, maintaining consistency, precision and speed during service.
• Carry out advanced knife work, fish butchery and rice preparation following Japanese techniques and standards.
• Ensure correct handling, storage and preparation of raw fish in compliance with food safety regulations.
• Maintain immaculate standards of cleanliness, organisation and mise en place in the sushi section.
• Support the Head Sushi Chef with service leadership, quality control and mentoring of junior team members.
