Job summary

Hoar Cross Hall Ltd is launching a new 60-cover Mediterranean restaurant and seeks a Restaurant Manager to lead from launch and shape the guest experience. You will build the team, set service standards and drive a Two AA Rosette ambition while collaborating with Head of Food & Beverage and the Chef.

You will oversee pre-opening, recruitment, training and on-floor leadership, delivering warm hospitality and exceptional food and drink in a premium setting.

Qualifications

• Previous experience managing a quality-led, premium or fine-dining restaurant.
• Experience within a Two AA Rosette environment.
• Interest in Mediterranean food, wine and hospitality.
• Excellent operational and commercial awareness.
• Experience managing budgets, labour costs, stock and restaurant performance.
• Experience recruiting, training and developing a restaurant team.
• Excellent food, beverage and service knowledge.
• Ability to engage with guests and build relationships.
• Attention to detail and delivering consistent high standards.
• Calm, organized and visible during busy services.

Responsibilities

• Lead pre-opening, launch and ongoing operation of the new restaurant.
• Recruit, develop and motivate a high-performing restaurant team.
• Create a warm, polished and memorable service style.
• Establish service standards and SOPs aligned with Two AA Rosette standards.
• Lead pre-shift briefings and ensure the team is ready for service.
• Build relationships with guests and maintain a strong presence on the floor.
• Collaborate with Chef and Head of F&B on menus and guest feedback.
• Coach the team on menu knowledge and upselling.
• Manage rotas, staffing levels, and wage costs.
• Support budgeting, forecasting and financial performance.
• Review sales and F&B performance via POS.
• Handle guest feedback and resolve concerns.
• Develop ideas for special events and experiences.
• Monitor market trends to evolve the restaurant.
• Support broader Food & Beverage operation and Duty Management when required.
