Hiddenwell is seeking a Senior Sous Chef to join the opening brigade of a brand-new 60-cover Mediterranean restaurant at Hoar Cross Hall. You will work closely with the Head Chef and Executive Chef to establish the kitchen operation, standards and a culture of quality, seasonality and hospitality.

You’ll lead the brigade during prep and service, drive food quality and presentation, develop the team and help launch menus, tastings and systems.

Qualifikationen

• Must have previous experience as a Senior Sous Chef or Sous Chef in a quality-led kitchen.
• Strong leadership and ability to motivate and develop a brigade.
• Excellent knowledge of food safety, hygiene and allergen management.
• Organised with attention to detail and a calm, professional manner during busy services.

Aufgaben

• Support Head Chef and Executive Chef in opening and developing the restaurant.
• Lead the kitchen brigade during preparation and busy services.
• Develop menus, recipes and seasonal specials with the team.
• Maintain exceptional standards of food quality and presentation.
• Ensure safe, efficient and commercially viable kitchen operations.
• Lead on induction, training and development of junior members.
• Maintain HACCP, food hygiene and allergen controls.
