Job summary

Marine Ballycastle is seeking an experienced Food & Beverage Manager to lead the day‑to‑day operation of our restaurant and bar, delivering consistently high standards and a memorable guest experience. You will recruit, coach and develop your team, plan rotas, manage labour costs and stock, and work with the Head Chef to refine our food and drink offering while maintaining food safety.

Qualifications

• Previous experience as a Food & Beverage Manager, Assistant Food & Beverage Manager or Restaurant and Bar Manager, with responsibility for leading a team.
• A passion for food, drink and creating memorable guest experiences.
• Strong leadership skills, with the ability to motivate, coach and develop others.
• Commercial awareness and experience managing budgets, labour costs and stock.
• Excellent communication, organisation and problem-solving skills.
• A hands-on approach, with the ability to remain calm and make effective decisions under pressure.
• A commitment to consistent service standards and continuous improvement.
• Flexibility to work various shifts, including evenings and weekends.

Responsibilities

• Lead the day-to-day Food & Beverage operation, ensuring consistently high standards across the restaurant and bar.
• Recruit, coach and develop your team, setting clear expectations and creating a positive, supportive working environment.
• Take ownership of departmental performance, managing labour costs, stock, purchasing and wastage against agreed budgets.
• Plan rotas around business demand, ensuring the right people are in place to deliver excellent service.
• Work closely with the Head Chef to coordinate service, develop the food and drink offering and identify opportunities to increase revenue.
• Maintain effective stock control, ordering and stocktaking processes.
• Monitor guest feedback and resolve concerns promptly, using feedback to improve service.
• Ensure compliance with food safety, hygiene, licensing and health and safety requirements.
• Work closely with the General Manager and other department heads to support hotel priorities and deliver a seamless guest experience.
• Lead by example during busy services, maintaining a visible presence and supporting your team on the floor.
