The Headland Cornwall in Newquay is seeking an exceptional Restaurants & Bar Manager to oversee our restaurant and bar operations across multiple venues on-site.

You will lead front-of-house teams, deliver a five-star service, and drive a dynamic drinks program with wines, spirits and cocktails, while mentoring your teams to create memorable guest experiences.

This full-time role includes evenings, weekends, and bank holidays, with strong focus on stock control, costing and guest satisfaction.

Qualifications

• Proven management experience in a high-quality, busy restaurant, bar or luxury hotel environment.
• Strong experience of both restaurant and bar operations, with ability to move between service styles.
• Genuine interest in drinks with knowledge of wines, spirits and cocktails and willingness to share that knowledge.
• Passion for hospitality and creating memorable guest experiences.
• Ability to lead, motivate and develop a diverse front-of-house team.
• Strong commercial awareness including stock management, cost control, rotas and revenue.
• Excellent communication and organisational skills.

Responsibilities

• Lead our Food & Beverage experience: oversee restaurant and bar service across multiple areas, maintaining a seamless 5* standard.
• Be present and hands-on: lead from the floor during busy services, supporting teams and delivering a warm, confident guest experience.
• Champion our drinks offering: develop wines, spirits, cocktails, beers and non-alcoholic drinks to grow a strong drinks program.
• Develop brilliant teams: coach, mentor and inspire restaurant and bar teams.
• Create memorable guest experiences: ensure attentive, effortless service and resolve concerns promptly.
• Manage stock and costs: maintain stock controls, accurate billing, reduce wastage, and manage staffing levels.
• Collaborate with Executive Head Chef and hotel teams to deliver a joined-up guest experience.
• Maintain presentation, cleanliness, hygiene and organisation across areas.
