Job summary

Mai Sushi is recruiting a full-time Chef Manager to lead our team at Chester, Foregate Street, CH1 1HP. You will oversee daily kitchen operations, ensure high-quality sushi, and uphold strict hygiene and safety standards.

The role requires enthusiasm, reliability and strong leadership, with shifts starting early. We support ongoing training and a collaborative, fast-paced work environment.

Qualifications

Level 2 Food Safety certificate required or desirable with full training provided.
Understanding of HACCP, allergens and COSHH considerations.
Ability to lead a team in a fast-paced kitchen environment.

Responsibilities

Lead and develop the kitchen team, ensuring high standards of food safety.
Prepare fresh ingredients by hand and manage kitchen operations from 6:00am shifts.
Maintain audit standards and compliance with health and safety regulations.

Job Description

Mai Sushi is recruiting a full-time (35 hours) Chef Manager to come and lead our team in Mai Sushi- Chester, Foregate Street, Chester, CH1 1HP

Enthusiastic, energetic with the ability to demonstrate initiative

Able to work as part of a team or on your own whilst maintaining high standards at all times,
Excited to produce amazing high-quality and sustainable food products

And have:

Experience in leading people, who can build confidence and capability in your team enabling them to succeed
Ready to work in a fast-paced environment whilst always leading by example
Pride in your work, constantly looking for ways to improve and continually learning
A good understanding of Food Safety & Health and Safety regulations, ability to follow brand standards and comply with company policies.
Reliable transportation for your commute to work early in the morning

And can:

Be accountable for the Kiosk and the team, maintaining audit standards for food and health & safety compliance while meeting EHO expectations
Ensuring the team maintains a high standard of cleanliness and food safety on site to maintain a safe environment for our customers, our clients and ourselves
Highly organised, with a focus on forward planning
Prepare fresh ingredients by hand, including meat and raw fish products each shift
Accurately labelling products ensuring lawful compliance around food safety and allergen compliance each shift.
Be a skilled multitasker
An early riser as shifts can start at 6:00am some days
Learn new skills or improve skills already mastered
