Protea Recruitment Ltd in Scotland is seeking a Sous Chef to join a coastal kitchen on the stunning West Coast. You’ll work closely with the Head Chef to deliver memorable seafood dishes in a friendly, well-organised team environment.

The role focuses on fresh ingredients, coastal flavours and maintaining high standards of quality and hygiene. Experience in seafood and leadership will help you excel in a busy kitchen by the sea.

Qualifications

• Proven experience as Sous Chef or Junior Sous ready to step up.
• Passion for fish, seafood and coastal cooking.
• Calm, organized and reliable under pressure.
• Strong commitment to quality and consistency.

Responsibilities

• Support the Head Chef with daily kitchen operations.
• Prepare and present high-quality seafood dishes.
• Lead the team when the Head Chef is off.
• Maintain high standards and consistency.
• Ensure food safety and hygiene compliance.
• Assist with stock control, ordering and waste reduction.
• Contribute ideas to seasonal menu development.
• Help build a positive, motivated kitchen culture.
