Job summary

Billesley Manor Hotel & Spa is a historic 4-star country house hotel set within 11 acres of landscaped gardens in the heart of Shakespeare’s countryside. We are seeking a talented Chef de Partie to join our kitchen team and develop their skills within a professional hotel environment.

As part of the kitchen brigade you will manage a designated section, prepare high-quality dishes, support juniors, and ensure food safety, hygiene, and high standards.

Qualifications

  • Experience as Commis Chef or Demi Chef de Partie in hospitality.
  • Passion for high-quality food and guest experiences.
  • Knowledge of food hygiene and HACCP procedures.
  • Ability to work calmly in a fast-paced kitchen.
  • Strong communication and teamwork.
  • Willingness to work evenings, weekends, holidays.

Responsibilities

  • Prepare, cook and present dishes to standard.
  • Manage a designated kitchen section daily.
  • Assist with menu prep and daily specials.
  • Monitor stock and ordering.
  • Ensure food storage, labeling and rotation.
  • Maintain cleanliness and hygiene throughout the kitchen.
  • Ensure compliance with safety and HACCP.
  • Mentor junior kitchen staff.
  • Collaborate with wider brigade for smooth service.
  • Report faults and safety concerns promptly.

Job Description

We are looking for a talented and enthusiastic Chef de Partie to join our kitchen team. This is an excellent opportunity for a passionate chef who is ready to develop their skills and take the next step in their culinary career within a professional hotel environment.

The Chef de Partie is responsible for managing a designated section of the kitchen, ensuring the preparation, cooking, and presentation of high-quality dishes that meet the hotel's standards. Working as part of the kitchen brigade, the Chef de Partie will maintain excellent food quality, support junior team members, and ensure compliance with food safety and hygiene regulations.

Key Responsibilities
  • Prepare, cook, and present food to the highest quality and presentation standards.
  • Take responsibility for the day-to-day operation of a designated kitchen section.
  • Ensure all dishes are prepared in accordance with recipes, portion controls, and service standards.
  • Assist the Sous Chef and Head Chef with menu preparation, daily specials, and food production.
  • Monitor stock levels within your section and report ordering requirements.
  • Ensure correct storage, labelling, and rotation of food in line with food safety procedures.
  • Minimise food waste through effective stock control and portion management.
  • Maintain high standards of cleanliness, organisation, and hygiene throughout the kitchen.
  • Ensure compliance with all food safety, HACCP, health and safety, and company policies.
  • Supervise, support, and mentor Demi Chef de Parties, Commis Chefs, and Kitchen Porters within your section.
  • Assist with the training and development of junior kitchen team members.
  • Work collaboratively with the wider kitchen brigade to ensure smooth and efficient service.
  • Report equipment faults, maintenance issues, and health and safety concerns promptly.
What We're Looking For
  • Previous experience as a Commis Chef or Demi Chef de Partie in a hotel, restaurant, or similar hospitality environment.
  • A passion for producing high-quality food and delivering excellent guest experiences.
  • Good knowledge of food preparation techniques and kitchen operations.
  • Understanding of food hygiene and HACCP procedures.Ability to work calmly and efficiently in a fast-paced kitchen.
  • Strong communication and teamwork skills.
  • A positive attitude with a willingness to learn and develop.
  • Flexibility to work shifts, including evenings, weekends, and public holidays.
