Responsibilities

• Manage dining operations
• Maintain exceptional levels of customer service
• Deploy staff to cover shifts and ensure mise-en-place is in place
• Manage, train and develop the team
• Work within payroll budgets and set schedules
• Drive sales to maximise budgeted revenue
• Oversee manpower planning and recruitment
• Maintain and improve food and beverage profits by monitoring wastage
• Stock, cost and cash control
• Develop menus with the F&B team
• Incentivise team to maximise sales
• Carry out appraisals and reviews
• Evaluate guest satisfaction and drive continuous improvement
• Attend daily/weekly team meetings
• Carry out Duty Management shifts
• Adhere to Licensing, Health & Safety, Food Hygiene, Fire and First Aid regulations
• Be a good example of dress code and appearance
• Undertake special duties as required by management
