• Proven sushi preparation skills at high-end dining venues.
• Knowledge of Nikkei cuisine and Peruvian techniques.
• Solid knife skills and fish handling expertise.

Responsibilities

• Prepare Sushi, Sashimi and Nigiri per brand standards.
• Manage station mise en place, rice, cuts, garnishes and plating.
• Engage guests at the sushi counter with product knowledge.
• Ensure fish freshness, storage, traceability and food safety.
