Bikini Island & Mountain Hotels in Colònia de Sant Jordi on Mallorca seeks an experienced F&B Manager to lead day-to-day operations across all F&B areas, ensuring smooth service and high standards in a seasonal resort environment.

You will manage a team of 35+ staff, work closely with the Head Chef and supervisors, plan staffing and budgets, drive revenue, and uphold Bikini and NENI franchise standards while delivering memorable guest experiences.

Competenze

• Previous experience in F&B management, ideally within hotels, lifestyle hospitality or high-volume restaurant operations.
• Experience leading large F&B teams and supervisors/middle-management structures.
• Strong leadership skills and the ability to delegate, empower and develop your team rather than micromanage.
• Excellent organizational and planning skills.
• A solid understanding of budgets, forecasts, cost control and F&B KPIs.
• Experience with staff scheduling, holiday planning and operational forecasting.
• A hands-on mentality combined with the ability to see the bigger picture.
• Strong communication skills and the ability to connect kitchen, service and hotel operations.
• Confidence working with hotel and F&B operational systems.
• Good English and Spanish; German or additional languages are a plus.
• Flexibility, ownership and the ability to adapt to the rhythm of a seasonal hotel.

Mansioni

• Take overall responsibility for the day-to-day F&B operation, ensuring smooth and consistent service across all areas.
• Lead and develop the F&B team of 35+ employees, working closely with supervisors, middle management and the Head Chef.
• Build a strong team structure by setting priorities, delegating responsibilities and developing your managers.
• Plan staffing, schedules, holidays and resources according to occupancy, forecasts, events and operational needs.
• Ensure Bikini service standards and NENI franchise standards are consistently implemented.
• Act as the main operational link between Bikini and NENI, supporting menu implementation, quality, service and new F&B initiatives.
• Take ownership of the department's budget, costs and financial performance, monitoring key KPIs and identifying opportunities to improve revenue and profitability.
• Work closely with Purchasing and the Head Chef on stock management, inventories, food & beverage costs and operational efficiency.
• Coordinate and oversee events, weddings, groups and special F&B activations, ensuring excellent guest experiences and successful execution.
• Work closely with Front Office, Housekeeping and Hotel Management to ensure smooth communication and collaboration across the hotel.
• Support the seasonal opening and closing, including recruitment, training, operational preparation, stock and financial procedures.
• Ensure the correct use of the hotel's operational and administrative systems, identifying discrepancies and coordinating solutions when needed.
• Be visible and hands-on during key operational moments while maintaining an overview of the entire department.
• Stay up to date with F&B trends, industry developments and new ideas, bringing inspiration and innovation to Bikini.
• Take ownership of the F&B guest experience, ensuring standards remain high and feedback is transformed into opportunities for improvement.
