Job summary

Chotto Matte is launching in Sydney and recruiting skilled Sushi Chefs de Partie to build our opening kitchen. You will run your section with precision, delivering signature sushi, sashimi and Nikkei dishes using premium seafood and produce.

As part of the launch team, you will work closely with Head Chef and Sous Chefs to shape the kitchen, mentor junior cooks and uphold cost and quality targets in a fast-paced, high-energy environment.

Qualifications

• Proven experience as a Sushi Chef de Partie or equivalent in a professional kitchen.
• Strong knife skills and a solid understanding of traditional sushi technique, with curiosity about Nikkei and fusion flavours.
• Calm and organised under pressure in a high-volume, fast-paced environment.
• A team player with clear communication and a positive, can-do attitude.

Responsibilities

• Take ownership of your section from mise en place through to service, maintaining high standards of prep and presentation.
• Work closely with Head Chef and Sous Chefs to execute the menu and help shape the kitchen at launch.
• Guide and support junior chefs, fostering a collaborative, respectful kitchen culture.
• Manage stock, minimise waste and contribute to cost and quality targets.
• Follow food safety, hygiene and WHS requirements at all times.
