Mindil Beach Casino Resort is seeking a dynamic Head Chef to lead The Vue kitchen and manage in-room dining and outlets in Darwin on a 12-month contract. You will drive menu concepts, mentor a diverse culinary team, and uphold exceptional food standards while controlling costs and labour.

The role requires high-end culinary experience and a proven track record in large-scale operations within premium hospitality environments.

Qualifications

• Proven experience managing large-scale kitchen operations.
• Experience in high-end restaurants or functions.
• Strong leadership and mentoring skills.
• Expertise in menu development, stock management, and cost control.
• Excellent communication and leadership across levels.

Responsibilities

• Oversee daily kitchen operations for The Vue, in-room dining, VIP Bar, Sportsbar, Infinity and Lagoon.
• Develop innovative menu concepts aligned with trends and guest preferences.
• Provide leadership, mentorship and hands-on training to foster a high-performing team.
• Maintain exceptional food standards through efficient systems and processes.
• Assist in managing department budgets, food costs and IT-driven efficiency.
