Mindil Beach Casino Resort in Darwin is seeking a full-time Head Chef with Asian specialty experience to lead a fast-paced kitchen and deliver authentic flavours with modern techniques across premium outlets.

The successful candidate will drive menu development, mentor a diverse team, manage costs and HACCP compliance to elevate guest satisfaction and commercial performance at the resort.

Qualifications

• Proven experience leading large-scale kitchen operations.
• Background in premium dining and/or large-scale functions; high-end venues experience valued.
• Demonstrated ability to lead, develop and inspire diverse culinary teams.
• Strong expertise in Asian menu development, stock control and cost management.
• Commercially driven with a track record of delivering operational and financial outcomes.
• Culinary qualifications with focus or exposure to Asian cuisine preferred.
• Confidence using kitchen and business systems (stock control, spreadsheets, reporting).

As Head Chef, you will lead a fast-paced kitchen, bringing authentic flavours, modern techniques, and creative flair to a diverse and vibrant dining environment. As part of our strategy to elevate our culinary offering and enhance guest satisfaction, we require a strong culinary leader with extensive experience across key Asian cuisines, including Chinese, Korean, Japanese, and Malaysian. The successful candidate should have a proven track record in high-volume and premium dining environments, with the ability to drive menu innovation while maintaining authenticity and consistency. You will lead menu development, introduce contemporary Asian dining concepts, strengthen quality control measures, and support the overall commercial performance of the outlets.

More About You

• Proven experience leading large-scale kitchen operations, ideally within high-volume Asian cuisine
• Background in premium dining and/or large-scale functions, with experience in hatted or high-end venues highly regarded
• Demonstrated ability to lead, develop and inspire diverse culinary teams
• Strong expertise in Asian menu development, alongside stock control and cost management
• Commercially driven, with a track record of delivering operational and financial outcomes
• Relevant culinary qualifications, with a focus or exposure to Asian cuisine preferred
• Confidence using kitchen and business systems, including stock control platforms, spreadsheets and reporting tools
