Mindil Beach Casino Resort is seeking a full-time Head Chef with Asian specialty experience to lead a fast-paced kitchen at Darwin. You will drive authentic flavours, modern techniques, and creative flair across a diverse dining environment.

The role requires extensive experience across Chinese, Korean, Japanese, and Malaysian cuisines, with a track record in high-volume, premium settings and a focus on authentic menu innovation and quality control.

Qualifications

• Proven leadership of large kitchen teams in high-volume environments.
• Experience in premium dining or large-scale events is essential.
• Strong background in Asian cuisines (Chinese, Korean, Japanese, Malaysian).
• Ability to drive menu innovation while maintaining authenticity and consistency.
• Excellent knowledge of HACCP and food safety practices.
• Proven cost control and budget management in a kitchen setting.

Responsibilities

• Design and evolve menus showcasing authentic Asian flavours with modern techniques.
• Provide hands-on leadership, mentoring and training to build a high-performing kitchen team.
• Maintain exceptional food quality and presentation through robust systems and processes.
• Monitor food costs, budgets and operational efficiency using kitchen data.
• Oversee labour planning and performance management for permanent and casual staff.
• Champion food safety standards and HACCP compliance across all kitchen operations.
