Job summary

The Virgin Kitchen at Daylesford, part of Travel + Leisure Co., seeks a Head Chef to lead our kitchen operations and design menus aligned with financial goals. You will ensure timely food and beverage service, maintain high standards, minimise waste, and drive guest satisfaction in a vibrant, resort-style setting.

Qualifications

• Experience as Head Chef or Chef de Partie in a kitchen.
• Trade qualifications relevant to the role.
• Genuine passion for food, quality and presentation.
• Ability to manage a rotating roster including weekends.

• Run day-to-day kitchen operations within budget.
• Plan and design menus aligned to financial goals.
• Ensure food safety and hygiene per HACCP and local guidelines.
• Produce and present all foods to standards.
• Oversee roster production and staff communication.

If you have a passion for food and exceeding guest expectations, then join our Club Wyndham Daylesford team as the Head Chef!How You'll ShineThe Head Chef is responsible for running the day to day operation of the kitchen, planning and designing menus that are in line with financial goals and is appealing to all guests, providing Food and Beverages in a timely and professional manner. This is a full time position, 38 hours per week.Responsibilities include, but are not limited to:Operate the Kitchen Department according to budget, complete monthly Food and Beverage performance reviewPlace highest importance to food safety and hygiene of food preparation as outlined in the HACCP principles and the local guidelines for catering establishments.Prepare, produce and present all foods in accordance with identified Food Hygiene and Health & Safety standards, commonly accepted in the catering industry.Display eagerness to increase food knowledge and skills.Strive to minimize food wastage.Provide an exceptional Guest experienceProduce menu costing in accordance with new menusOversee roster production for the Restaurant to ensure required coverageCommunicate promptly, clearly and concisely to General Manager and team members on all matters.High level understanding of Hotel, Restaurant and resort operations.Comply with T&L's OH&S Policy, procedures and any reasonable instruction given by WDAPWhat You’ll BringDemonstrated experience in a similar Head Chef or Chef de Partie roleRelevant trade qualificationsGenuine passion for food, quality, and presentation and guest experienceStrong organisation and problem-solving skillsCalm under pressure with a positive, can-do attitudeFlexibility to work a rotating roster including weekends and public holidaysHow You’ll Be RewardedBuild your career with a value driven organisation that promotes continual growth and development for its people.
