Job summary

Travel + Leisure Co. is seeking a Head Chef to run the day-to-day kitchen operations, design menus aligned with financial goals, and deliver food and beverage service to guests.

The ideal candidate has relevant trade qualifications and prior Head Chef or Sous Chef experience in hotel or resort settings, with a passion for guest satisfaction and high food safety standards. The role requires flexibility to work nights, weekends and public holidays.

How You'll Shine

The Head Chef is responsible for running the day to day operation of the kitchen, planning and designing menus that are in line with financial goals and is appealing to all guests, providing Food and Beverages in a timely and professional manner.

Responsibilities

• Operate the Kitchen Department according to budget
• Complete monthly Food and Beverage performance review
• Place highest importance to food safety and hygiene of food preparation as outlined in the HACCP principles and the local guidelines for catering establishments
• Prepare, produce and present all foods in accordance with identified Food Hygiene and Health & Safety standards, commonly accepted in the catering industry
• Display eagerness to increase food knowledge and skills
• Strive to minimize food wastage
• Provide an exceptional Guest experience
• Produce menu costing in accordance with new menus
• Oversee roster production for the Restaurant to ensure required coverage
• Communicate promptly, clearly and concisely to General Manager and team members on all matters
• High level understanding of Hotel, Restaurant and resort operations
• Comply with T&L's OH&S Policy, procedures and any reasonable instruction given by WDAP

How You’ll Be Rewarded

• Full time position - 38 hours per week
• Minimum of salary of $80,000 per annum
