Job summary

Hilton Sydney is seeking a Director of Food & Beverage to lead multiple outlets and drive revenue growth while upholding Hilton standards. You will shape menus with the Executive Chef, manage budgets, and develop high-performing teams to ensure guest satisfaction across all venues.

Reporting to the Director of Operations, you will oversee budgets, workforce planning and supplier relationships, delivering excellence in a fast-paced hotel environment.

Qualifications

• Significant leadership experience in a large-scale hotel, hospitality, or premium F&B setting.
• Strong commercial acumen with proven revenue growth and cost-management capabilities.
• RSA certification and full Australian working rights.
• Excellent communication, presentation and interpersonal skills.

Responsibilities

• Lead operations for all F&B outlets ensuring exceptional guest experiences and financial targets.
• Develop and implement annual business, marketing and revenue strategies with stakeholders.
• Monitor revenue, payroll, beverage costs, inventory and forecasting to maximise profitability.
• Ensure compliance with Hilton brand standards, food safety, HACCP, RSA and workplace policies.
• Lead and develop a high-performing team through recruitment, coaching and succession planning.
• Collaborate with Executive Chef on menus, pricing and product offerings.
