Job summary

MACKAY CRICKET ASSOCIATION INC. Trading as HARRUP PARK COUNTRY CLUB in Mackay, Queensland, is seeking full-time Chefs and Cooks for their busy bistro. The role is permanent, 38 hours per week, with four weeks annual leave, and salary plus super.

You must have a relevant industry qualification and at least 3 years’ experience. Experience with Greek or Mediterranean cuisine is highly desirable, and you will contribute to menu planning, food cost estimation, and rostering in a vibrant team.

• Control food cost and labour cost; assist with rostering.
• Maintain food safety, hygiene and WHS compliance.
• Train junior team members on cooking techniques.

Harrup Park, located in Mackay, Queensland, is a premier sporting and entertainment venue renowned for its vibrant community atmosphere and diverse offerings. The complex features the Great Barrier Reef Arena, a world-class facility hosting major sporting events, including international cricket and AFL matches.

The venue boasts multiple dining options, such as The Bistro and Boundary Cafe, where patrons enjoy a variety of culinary delights. The Bistro offers a relaxed, family-friendly environment with a menu ranging from classic Australian dishes to contemporary Italian and Spanish-inspired cuisine.

To be considered for the role you need to have a relevant industry qualification and at least 3 years' experience in a similar position.

SKILLS & EXPERIENCE

• Must display excellent prep, cooking and plating skills
• Experience with Greek or Mediterranean cuisine highly desirable
• Strong emphasis on quality and consistency of dishes
• Demonstrate a keen
• Interest in growing food trends and techniques
• Ability to contribute to menu planning, food cost estimation and food cost control
• Work with the management team on food preparation and seasonal menu planning
• Stock ordering
• Labour cost control and assist the owners with rostering
• A sound knowledge of food safety, hygiene and WHS and able to explain and enforce
• Immaculate presentation and grooming
• Ability to handle large service numbers
• Above average customer care and service skills
• Training of junior team members on cooking techniques and procedures
• Assist with staff hiring and training
• Experience on grill and pan section highly desirable
• Planning menus, estimating food and labour costs, and ordering food supplies
• Discuss customer requirements and request with the frost on house team
• Monitoring quality of dishes at all stages of preparation and presentation
