Job summary

The Fullerton Hotel Sydney, located in Sydney CBD NSW, seeks a Chef de Partie to lead a designated kitchen section and deliver meals that meet luxury standards for our award-winning hotel.

You will mentor junior chefs, ensure HACCP compliance, manage stock, and support menu development in a fast-paced environment. This full-time role requires flexibility for a 7-day rotating roster, including weekends and holidays.

Qualifications

• Full working rights in Australia.
• Certificate IV in Commercial Cookery or above.
• Strong communication skills in English.
• In-depth understanding of HACCP principles.

Responsibilities

• Manage a designated kitchen section, ensuring dishes are prepared with consistency, quality and presentation.
• Lead and mentor junior chefs, fostering teamwork and guiding them to excel within your section.
• Maintain hygiene, safety and HACCP compliance in the kitchen.
• Monitor stock levels, minimise waste and manage resources to support cost-effective operations.
• Collaborate on menu development, bringing creative ideas that reflect culinary excellence.
• Execute additional tasks as needed by the Executive Chef and Director of Culinary.
