Job summary

The Downs Hotel in Drayton, Toowoomba QLD is seeking a Casual Line Chef to support lunch and dinner service. You’ll work across the Grill, Range and Middle Line to deliver high-volume pub favourites with consistency.

We offer 30+ hours per week, regular shifts and penalty rates for nights, weekends and public holidays. The role fits someone with a Cert III in Commercial Cookery who works well in a team and stays calm during busy periods.

Qualifications

• Experience in a busy kitchen or pub kitchen environment.
• Availability across weekdays, evenings and weekends.
• Confident grill and line cooking with attention to portion control.

Responsibilities

• Run service sections, primarily Grill / Range and Middle Line.
• Cook high-volume pub favourites to order.
• Maintain quality, presentation and portion control.
• Keep tickets moving during busy services.
• Complete daily mise en place and sauces while following HACCP.

Casual Line Chef / Commercial Cook – 30+ Hours

About the Role

You’ll be hands-on across lunch and dinner service, helping keep the kitchen running smoothly during busy periods.

Your responsibilities will include:

Running service sections, primarily Grill / Range and Middle Line

Cooking high-volume pub favourites including steaks, parmi's, burgers, seafood and roasts

Maintaining consistent quality, presentation and portion control

Keeping tickets moving and working efficiently through busy services

Completing daily mise en place, protein preparation and sauces

Following food safety, HACCP and kitchen hygiene procedures

Working closely with the kitchen team to deliver a smooth service

About You

We’re looking for someone who:

Holds a Cert III in Commercial Cookery

Is confident working the grill and line

Can consistently cook steaks to order in a high-volume environment

Is reliable, punctual and takes pride in their work

Stays calm and focused during busy service

Communicates well and works effectively as part of a team

Can also work confidently and independently when required

Has availability across weekdays, evenings and weekends
