Job summary

AC by Marriott Gold Coast is seeking a Bartender to join our pre-opening team. You will craft cocktails and beverages across Rivo Restaurant and other outlets, deliver memorable guest experiences, and help shape beverage standards from day one.

You will engage guests with product knowledge, stay ahead of trends, and support bar operations while ensuring polished, hospitality-driven service. Evening and weekend availability is essential.

Qualifications

• At least 1 year of bartending or beverage experience.
• Strong cocktail-making and beverage knowledge.
• Interest in current trends and creative beverage concepts.
• Excellent guest engagement and communication skills.
• Confidence recommending beverages and tailoring the experience.
• Attention to detail, presentation and consistency.
• Ability to work across multiple Food & Beverage environments.
• Flexibility to work evenings, weekends and public holidays.

Responsibilities

• Prepare and serve cocktails, spirits, wine, beer and non-alcoholic beverages to a high standard.
• Deliver beverage experiences across Rivo Restaurant and other outlets as required.
• Use product knowledge to recommend drinks and create personalised guest experiences.
• Stay up to date with beverage trends, local products and techniques.
• Contribute ideas for seasonal cocktails and beverage activations.
• Maintain well-presented, organised and stocked bar areas.
• Ensure accurate handling of payments and cash where required.
• Monitor stock levels and support beverage inventory and replenishment.
• Anticipate guest needs and own the overall experience.
• Follow workplace health and safety, liquor licensing and Marriott procedures.

As part of our pre-opening team, you’ll also have the opportunity to help shape our beverage standards, service rituals and bar culture from day one.

What You’ll Do

• Prepare and serve cocktails, spirits, wine, beer and non-alcoholic beverages to a consistently high standard.


• Deliver beverage experiences across Rivo Restaurant and other hotel Food & Beverage outlets as required.


• Use your product knowledge to recommend drinks and create personalised guest experiences.


• Stay up to date with beverage trends, local products and cocktail techniques.


• Contribute ideas for seasonal cocktails, signature serves and beverage activations.


• Maintain beautifully presented, organised and fully stocked bar areas.


• Ensure accurate handling of payments, transactions and cash where required.


• Monitor stock levels and support beverage inventory and replenishment.


• Anticipate guest needs and take ownership of the overall experience.


• Follow all workplace health and safety, liquor licensing, responsible service and Marriott International procedures.

• At least 1 year of relevant bartending or beverage experience.


• Strong cocktail-making and beverage knowledge.

Preferred Qualifications

Experience: At least 1 year of relevant bartending, mixology or beverage experience preferred.

Certifications: Current Responsible Service of Alcohol (RSA) and Food Safety Certificate.
