Bonnie Hotels Group is seeking a Duty Manager to lead the day-to-day operations of our NSW pubs. This full-time role focuses on safe, compliant, and guest‑oriented hospitality.

You will manage staff, licensing compliance, inventory, and service standards, while mentoring the team and driving guest experiences. The successful candidate will hold an Advanced Licensee qualification, have 4+ years in a senior hospitality role, and be flexible to weekend shifts.

We are seeking Duty Managers to join our growing team at Bonnie Hotels Group.

This is a full-time position that plays a strategic & integral role in the management & operation of our pubs.

You will hold the responsibility for the day-to-day management of the venue, ensuring compliance with all licensing regulations & hospitality standards. This role is critical to maintaining the reputation, profitability, & operational excellence of the hotel whilst upholding our commitment to providing outstanding guest experiences a safe, welcoming environment for staff & patrons alike.

What you'll be doing

• Managing daily pub operations: Overseeing the smooth running of the venue, including the bar, gaming room, staff & customer service.
• Ensuring strict compliance with all liquor licensing laws, health & safety regulations & company standards
• Maintaining high standards of customer service & mentoring your team
• Managing supplier relationships & inventory control on food, beverage & operational supplies
• Monitoring marketing strategies to drive business growth
• Conducting regular inspections to ensure the hotel facility is well‑maintained, clean, & meets all regulatory requirements
• Creating & fostering a positive workplace culture that promotes staff wellbeing & retention

What we’re looking for

• Current Advanced Licensee qualification, demonstrating your understanding of licensing obligations & hospitality management
• A minimum of 4+ years experience as Duty Manager, or similar senior hospitality management role in Pubs located in New South Wales
• Strong knowledge of liquor licensing laws, responsible service of alcohol (RSA) practices & workplace health & safety regulations
• Strong leadership & people management skills with the ability to build, develop & motivate diverse teams
• Outstanding customer service orientation with a genuine commitment to delivering exceptional guest experiences
• Flexibility & willingness to work varied hours including weekends, evenings & public holidays as required
