Job summary

Sheraton Grand Hotel, Dubai is seeking a senior kitchen professional to support all aspects of kitchen management, training, menu development, and health and safety standards. You will inspire a large brigade and ensure consistent delivery of high-quality dishes in a fast-paced hotel environment.

The role requires strong knowledge of HACCP, world cuisines, and the ability to lead daily operations, train staff, and coordinate with hotel leadership.

Qualifications

• Completion of daily required food safety records to comply with HACCP & Sous Vide SOPs.
• Ability to supervise and maintain high levels of food production and delivery.
• Knowledge of classic and modern cuisines and preparation techniques.
• Experience leading a large brigade of chefs on a daily basis.
• Maintain high personal hygiene and professional image.
• Understand hotel policies and fire-safety procedures.

Responsibilities

• Coordinate with Executive Chef and kitchen leaders to maintain standards.
• Inspire and coach kitchen staff to deliver high-quality dishes.
• Manage food stock levels, costings and menu planning.
• Oversee health, safety and cleanliness of production areas.
