Wynn Al Marjan Island is seeking a Sous Chef – Indian Brasserie to join the Culinary team. You will oversee daily kitchen operations, develop menus with the Executive Chef, and lead a high-performing team in a 5-star environment.

Ideal candidates bring strong knowledge of Indian cuisine, cost control expertise, and exceptional leadership, communication, and organizational skills. This role requires flexibility in shifts and a minimum 8 years in a 5-star kitchen.

Qualifications

• Strong knowledge of Indian cuisine, including cost control and pricing of ingredients and supplies.
• Strong leadership and supervisory skills with the ability to motivate and guide team members.
• Excellent communication and interpersonal skills for staff and management.
• Strong organizational and time management skills to oversee inventory and kitchen operations.
• High attention to detail ensuring food quality, presentation and compliance with health regulations.

Responsibilities

• Oversee daily kitchen operations to ensure efficiency and adherence to culinary standards.
• Monitor resource consumption and optimize equipment, ingredients, and inventory.
• Develop weekly menus, monthly promotions, and seasonal offerings with the Executive Chef.
• Ensure dishes are prepared per recipes and quality standards.
• Lead and coach kitchen team to maintain performance and teamwork.
• Maintain kitchen cleanliness and hygiene per HACCP and safety regs.
• Address guest requests and feedback to enhance dining experience.
• Uphold health and safety practices and take on additional duties as assigned.
