Job summary

Wynn Al Marjan Island seeks an Assistant General Manager for the Steakhouse by Alain Ducasse Restaurant to lead daily operations on-site in the UAE. This role oversees service, kitchen coordination, and guest satisfaction, while driving revenue and maintaining luxury standards.

The candidate will manage a supervisory team, coordinate training with the F&B leadership, and ensure adherence to SOPs and health and safety standards in a 5-star environment.

Qualifications

• 2-3 years leadership experience in fine dining or luxury venues.
• Experience in Michelin-recognized or Gault Millau restaurants preferred.
• Strong knowledge of cuisine and wine; WSET 2 preferred.
• Working knowledge of budgeting basics, allergen management, and food safety.
• Bachelor’s degree in hospitality management is an advantage; WSET 2 is a plus.
• Fluent English and another European language.

Responsibilities

• Execute daily shifts to SOPs, ensuring consistency and mise-en-place readiness.
• Support GM with cost control, labor scheduling, inventory, and cash handling.
• Develop and implement business strategies and promotions to maximize revenue and seat utilization.
• Coordinate with kitchen on menu availability, dietary needs, pacing, and specials.
• Oversee reservations, waitlist and floor plans to optimize turn times and guest flow.
• Prepare and present daily shift reports; raise issues with the GM and suggest solutions.
• Assist with restaurant administration (timekeeping, petty cash, logs, stock counts).
• Provide day-to-day supervision and coaching to supervisors and service teams.
• Maintain Forbes 5-Star standards; conduct table touches and follow-ups.
• Handle complaints and recovery promptly with GM involvement when needed.
• Provide VIP and media guest service coordination with PR/VIP as required.
• Schedule training plans with F&B Trainer and GM; maintain updated SOPs.
