Job summary

Wynn Al Marjan Island seeks an Assistant General Manager – Lebanese Restaurant to lead the Food & Beverage team at our UAE resort. You will execute daily shifts, manage costs, drive revenue, and coordinate with kitchen and PR to ensure top-tier service.

The ideal candidate has 2–3 years of fine dining leadership, experience in luxury settings, strong English and an additional European language, and budgeting know-how. This on-site role offers a comprehensive benefits package in AED.

Qualifications

2–3 years leadership experience in fine dining.
Experience in Michelin recognized or Gault Millau restaurants preferred.
Fluent spoken and written English, and another European Language.
Working knowledge of budgeting basics, allergen management, and food safety.

Responsibilities

Execute daily shifts to SOPs ensuring consistency and mise en place readiness.
Operate cost effectively within budgets; support GM in cost control, labor scheduling, inventory, and cash handling.
Develop and implement business strategies and promotions to maximize revenue, seat utilization, and productivity.
Coordinate with kitchen on menu availability, dietary needs, pacing, and specials.
Oversee reservations, waitlist, and floor plans to optimize turn times and guest flow.
Prepare and present daily shift reports; escalate issues and propose solutions to the GM.
Support restaurant administration including timekeeping, petty cash, incident logs, and stock counts.
Provide day-to-day supervision, direction, and coaching to supervisors and service teams.
